So we're trying to figure out what's for dinner.

We have a pork roast.


I started thinking, I wish we could have Cuban sandwiches, those flavors were always so good...then I thought, why not make a breadless Cuban meat roll??

And, so we did.

First we butterflied open the pork, and covered the inside with yellow mustard. Then we arranged the orange slices. We realized garlic slivers should go in there too, so we moved the oranges to spread around some garlic and replaced the oranges. Then some black forest ham slices went in there.


Roll it all up and tie it to keep it together.


Then we roasted it for about 3 to 3 1/2 hours at 350 degrees.


We served it with fresh buttered corn on the cob and some spears of Kosher pickles on the side.


This recipe is definitely a keeper!
