So, it's been a couple of weeks, and I've been learning some stuff. Like using pork rind crumbs instead of bread crumbs for breading or for a binder. It's better than it sounds, I swear.


Anyway, we always try to make something inspired on the weekend. I was itching to get to the store for some fish to steam....but the kid wanted nothing to do with getting out of bed. Right. Plan B. Time to think up a plan B here. Why do we not have a plan B???

Let's see...what's cheap? How about ground pork. Okay good. What the heck do I do with ground pork here?

Apparently I use ground pork to make meatballs. I didn't want meatballs today and didn't want any tomato sauce. I made pork pattys with Italian parsley, Parmesan cheese, garlic, an egg, salt, pepper and a little red pepper flakes.


It was 1 pound of ground pork, about 2 to 3 tablespoons well chopped parsley, 3 big cloves of garlic, about a 1/4 cup of grated cheese, and seasoned to taste. Then we just fried those suckers up.






Everything great about a meatball with nothing covering it up!






These would also be good with a little white wine, butter, caper pan sauce if you wanted.

We just served them up with some nice mushroom risotto and pan seared aspargus.


Everyone approved, and I am allowed to make thse again, Yay!
